Exclusive Kohlrabi and Carrot Slaw from
Eclectic Culture Farm

1 1/4 pounds kohlrabi (trim, peel, shredded: use leaves and stems)
A bunch of carrots shredded
A small zucchini, seeded and diced (leave skin on for color)
1/2 cup chopped scallions/chives
1 teaspoon dill, chopped fresh
1 farm fresh egg!
1/3 cup olive oil
1/3 cup red wine vinegar
1/3 cup sour cream or non-fat plain yogurt
1 teaspoon fresh minced spicy oregano from E.C. Farm
1/2 teaspoon cumin, ground
1/2 teaspoon salt
1/4 teaspoon black pepper

Combine kohlrabi, carrots, zucchini, scallions/chives, and dill in a large bowl. Toss lightly.
Beat the egg in a medium bowl. Slowly add the oil, vinegar, sour cream, scallions/chives, cumin, salt and pepper.
Pour this dressing over the vegetables and toss well. Refrigerate covered for 2 hours before serving.

Serves 4-6.
