Secret Recipe Eclectic Culture Farm Rhubarb bread


1 ½ Cups organic brown sugar
¾ Cup canola oil
1 farm fresh egg
2 ½ cups all-purpose unbleached flour
1 cup buttermilk (or add 1 tbsp of fresh lemon juice to goat’s milk)
1 tsp. kosher salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. real vanilla
2 ½ cups farm fresh rhubarb (about 2 bunches from Eclectic Culture Farm)
½ cup walnuts or pecans (optional)
½ cup organic cane sugar
1 tbsp. fresh butter

Preheat oven to 325F. In a medium bowl, mix organic brown sugar, oil and egg together, then add flour, milk, salt, baking soda, cinnamon and vanilla. Fold in rhubarb (and nuts if using). Place in 2 greased
9 x 5” bread pans (we do not use aluminum pans). Combine sugar and butter and glaze over top of loaves. Bake for 1 hour. Yields 2 delicious loaves!
